- Bacterial infections and trichinellosis can both cause gastrointestinal symptoms.

Trichinella, a type of worm larvae, can infect raw pork. Although commercial manufacturers smoke and cure bacon before selling it, smoking and curing don’t always kill Trichinella, according to the Ask the Meatman website. But the added salt and nitrites in bacon do make it less perishable than other types of raw meat, according to the United States Department of Agriculture Food Safety and Inspection Service.
Salt slows bacterial growth by directly inhibiting growth or by reducing the water content; bacteria need water to grow. Nitrites retard the growth of Clostridium botulinum toxin and also prevent spoilage. Precooked bacon has been heated before packaging, which kills bacteria. However, if the bacon becomes contaminated with bacteria in the factory during the packaging process, you can develop a bacterial infection if you eat it raw.
In 2010, Nestlé Professional North America recalled more than 6,000 pounds of ready-to-eat bacon because of possible bacterial contamination with Salmonella. The flavor enhancer added to the bacon, called hydrolyzed vegetable protein, and not the meat itself, was the source of the bacteria.

Is trichinosis contagious? – Trichinosis is an infection, but it’s not one that you pass on by sneezing or coughing. However, there’s some evidence that a pregnant person with trichinosis can pass the infection on to their baby. Your healthcare provider might decide you have trichinosis on the basis of:
